The First Recipe – Chickpea Salad Sandwich

This is the first recipe I wanted to share. Fast and simple.

Ingredients:

  • Chickpeas (Garbanzo Beans) – 1/2 a can
  • Apple (your preference of which kind but sweet apples like Fiji or Pink Lady are best) – 1/2
  • Green Onion – 1
  • Vegenaise – 2 table spoons
  • Salt and Pepper – to taste
  • Wholewheat Pita Pocket – 1

Prep:

  • Lightly mash the chickpeas
  • Cut up the 1/2 apple into small pieces
  • Chop the green onion
  • Mix in a bowl
  • Cut the pita in half and stuff each half with the mixture
  • Enjoy!
